
Chocolate Chip Protein Cookies
I don’t know what it is about the fall and winter season, but cookies are a must have this time of the year. Unfortunately most store bought cookies are full of synthetic and harmful ingredients. We’re also gluten and dairy free, making finding good quality cookies even harder. Read more about processed foods here. Even organic cookies are often loaded with sugar. So, it really is best to just make them ourselves.
However, even homemade cookies can be loaded with sugar and other less than ideal ingredients. It’s important to choose high quality ingredients as well as a recipe that isn’t loaded up on sugar. That’s where these chocolate chip protein cookies come in. This recipe not only is lower in sugar than most cookie recipes and uses natural sweeteners, but it’s also full of healthy fats and protein, and it dairy, soy, and gluten free.
What You’ll Need
- Gluten free flour blend of choice. We make our own blend using brown and white rice flour, and tapioca starch.
- Almond flour
- Eggs
- Olive oil or coconut oil
- Pure vanilla extract
- Pure maple syrup
- Stevia
- Cream of tartar
- Himalayan pink salt or Celtic Sea salt
- Collagen powder. We get ours from Perfect Supplements
- Dairy free chocolate chips. We use the enjoy life brand.

Directions
- Beat 3 eggs together in your mixing bowl.
- Add 1/2 cup water, 1/4 cup of olive or coconut oil, 1 teaspoon of vanilla, 2tbsp of maple syrup, and 4 scoops of collagen. Mix thoroughly.
- Add 1/2 teaspoon of salt, 1/2 teaspoon of cream of tartar, 1/2 cup of stevia, and 1 cup of almond flour. Mix thoroughly.
- Mix in 1-2 cups of flour 1/2 cup at a time until you reach the desired consistency. We aim for a more tacky consistency that just barely holds it’s shape.
- Add in 1 cup of the chocolate chips and mix well
- Spoon out golf ball size amounts on to your cookie sheet and back for 8-10 minutes at 350⁰.
- Place on a cooling rack to cool, and enjoy!
Final thoughts
This recipe makes 20-25 cookies with approximately 5g of protein per cookie and only 2g of added sugar per cookie.
Depending on the blend of gluten free flour you’re using you will need more or less flour than the recipe suggests.
If you desire more protein per cookie add in more collagen or a protein powder of choice. I highly recommend this one.
