Pumpkin Spice Pancakes

What You will Need

- Pumpkin puree
- Apple sauce
- Almond flour
- Eggs
- Collagen (optional)
- Vanilla Extract
- Pumpkin Spice
- Salt
- Dairy free milk of choice or water
- Mixing bowl and spoon
- Frying pan and spatula
Directions
- Mix 1 cup of pumpkin puree, 1/2 cup of apple sauce, and 3 eggs together
- Add 1 cup of almond flour and 2 scoops of collagen if desired and mix well
- Add 1-2 table spoons of pumpkin spice depending on desired taste
- Add a dash of salt and 1 teaspoon of vanilla and mix well.
- Add 1/4-1/2 of dairy free milk or water until you reach your desired thickness. We prefer our pancakes on the thicker side, more liquid might be needed depending on your preference.
- Heat your pan and add dairy free butter, coconut oil, or bacon grease.
- Using a 1/4 measuring cup ladle your batter into your pan making 2-3 inch circles.
- Cook for 2-3 minutes flip and continue cooking for 1-2 minutes.
- Remove from the pan and enjoy.

Optional Toppings
These pumpkin spice pancakes are delicious on their own but they also go well with a dollop of whip cream(find my dairy free whip cream recipe here) or some pure maple syrup. My kids enjoy them with peanut butter. You could even top them with some cinnamon spiced apples. The possibilities are endless.
